Banana Nut Muffins - Vegan

Preheat Oven to 350°F

Mix together:
1/2 cup shortening
3/4 cup sugar
1/2 cup applesauce
2 1/2 mashed, slightly over-ripe bananas
1 teaspoon vanilla extract
1 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup quick oats
1/2 cup nut of your choice (I used crushed, unsalted pistachio nuts)

Pour into greased muffin tin

Bake for 15-20 minutes, or until golden brown

Let cool and enjoy!!
